I have a secret to share with you. I bought a slow cooker and I am absolutely obsessed with it. It’s a Cuisinart and I bought it on Amazon. Mostly because it allows you to make deliciously sumptuous food with half the calories and twice the flavor.
My second secret is I am seriously in love with carrot cake. And I made a delicious batch of this last weekend!
What’s In It?
1 cup brown sugar
1 cup apple sauce (instead of oil)
1/4 cup Agave (sugar replacement–all natural)
1 1/2 cups flour
1 tsp baking soda
1 cup chopped walnuts (I didn’t add em but it would be delicious)
1 teaspoon salt
1 1/2 cups finely grated carrots
1 teaspoon vanilla extract
1 tablespoon ground cinnamon
If you want to get fancy you can top the cake with 0% Fage Yogurt & honey or a cream cheese frosting–this is your opportunity to be creative.
Mix together eggs, sugar, and apple sauce. Next add the flour, baking soda, salt, and cinnamon to the mixture and stir very well until all ingredients are well mixed. Finally add the carrots and walnuts to the mixture and stir to mix the ingredients around. Pour ingredients into the crockpot. Cover and cook on a high setting for about 3 hours using a toothpick test to determine if cake is ready.
