Panko Encrusted Lemon Chicken, Potato Grits With Farmer’s Salad

Last night I cooked what seemed like a simple meal that was packed full of flavor. Probably a good meal to have post-superbowl. So if it’s early enough for you I suggest you run to Trader Joe’s (or the Farmer’s Market) to grab these ingredients.

  • Panko Encrusted Lemon Chicken
  • Grits
  • Farmer’s Salad

I tend to use a lot of ingredients-but it is not a sin to leave some of them out. This meal was very flavorful–mostly because I purchased very fresh ingredients from the Farmer’s Market. The idea is pretty simple, but the flavors are not!

Panko Encrusted Lemon Chicken

Ingredients:

  • One package of chicken breast (lean)
  • 1 cup Japanese Panko Bread Crumbs
  • 1 lemon
  • Three egg whites
  • Olive oil spray
  • One flat pan

Directions:

  1. Clean the chicken
  2. Dip the chicken in egg whites
  3. Squeeze 1/4 a lemon over the chicken
  4. Dip the chicken on both sides in the bread crumbs (in a bowl)
  5. Brown the chicken in the olive oil spray over medium heat on both sides


Potato Grits

Ingredients:

  • Five medium-sized red potatoes
  • 1/4 a package of cooked polenta (the roll from Trader Joe’s)
  • Low fat brie cheese
  • Fat free feta
  • Low fat parmesan cheese
  • Garlic
  • Cinnamon
  • Curry powder
  • Fresh cilantro
  • pepper/salt
  • white horseradish
  • brown grain mustard
  • fat free milk
  • a blender

Directions:

  1. Boil potatoes
  2. skin potatoes (put skins in oven for salad)
  3. add polenta
  4. add all other ingredients–taste for measurements
  5. Add a sprig of cilantro for aesthetic appeal

Farmer’s Salad

Ingredients:

  • Edible flower petals
  • mixed greens/mustard lettuce
  • pomegranate seeds
  • turkey bacon (light)
  • potato skins toasted from Grits ingredients
  • Carrot
  • Fat free feta cheese
  • Dried tomatoes

Directions:

  1. Add all ingredients together
  2. Put oven on 350 degrees
  3. brown turkey bacon in the pan
  4. To keep the turkey bacon warm put in oven with chicken (to keep it warm)

Dressing

I always make my own dressing–it’s super easy!

Just use what you have in your spice rack, herb garden along with olive oil and balsamic vinegar (black). Be creative!

Possible Ingredients:

  • Olive oil
  • black vinegar
  • pepper
  • honey
  • cilantro
  • rosemary
  • a little salt
  • a little cheese (fat-free feta/parmesan–whatever you have)

Shake it up and pour over salad (not drenched–just light pour).

I added a giant dried roasted tomato on top of mustard horse-radish for the chicken. The ultimate comfort food!
